Another week in quarantine has gone by and I refuse to get addicted to watching Netflix. So instead, I decided to get my baking on and bake a chocolate cake! I have been baking ever since I can remember. My grandma and I used to bake everything – from pies to cakes to muffins. Everything!
I wasn’t really sure if I wanted to post my baking on here as I mainly try to focus on healthy living. But, one of the things I find most important in a healthy lifestyle is eating everything but in moderation. (That means chocolate cake too). So that being said, it can’t hurt to have a couple of delicious baking recipes on the blog! Am I right?
Also, to top it all off, it was my mom’s birthday this past weekend. I asked what kind of cake she wanted and all she said was “Chocolate on chocolate on chocolate.” Enough said I made her a chocolate cake!
I am a huge fan of chocolate brownies or chocolate muffins as I find the consistency richer and flavourful. Growing up, I loved chocolate cake but have found them not as tasty if they’re layered. They tend to either taste a little dry or that richness is gone. As for why – I don’t know. This is a recipe I have been using for a while now and can promise you, it is moist (worst word EVER – I know but I can’t describe it any other way), it is rich and it is decadent. This chocolate cake recipe IS the best chocolate cake recipe ever. It is more of a deep rich delicious brownie kind of taste rather than a dry brittle “bought it at the grocery store” kind of cake.
Baking Essentials
So, one of the first things that I ordered just before easter was a cake decorating set. Wow, this was life-changing. I had made cakes beforehand but never was able to make them look professional. This set is a game-changer. If you’re new to baking/cake decorating I highly recommend this set. It comes with over 100 plastic pipe bags and more than 20 different types of piping lids and a rotating cake table. Anyways, you can check it out here. I don’t know how I would have gotten my cake looking this great without this.
As for now, I will only be posting this chocolate cake recipe as I prepare and organize the Nutella buttercream frosting I added for this cake. Stay tuned, as for the frosting and some layering tips as well.

Best Chocolate Cake Ever
Notes
For the dairy-free option, make sure that you let your lemon juice or vinegar sit in the coconut milk until it has curdled up or else it will not give the proper consistency for the cake.
Ingredients
- 2 cups All-purpose flour
- 2 cups Sugar
- 3/4 cup (85g) unsweetened cocoa powder
- 2 tsp Baking soda
- 1 1/2 tsp Salt
- 2 Eggs
- 1 cup (240ml) buttermilk OR Dairy-Free Option [ 1 tbsp Lemon juice or vinegar into 1 cup of coconut milk ( * please read instructions)]
- 1 cup Canola Oil
- 1 1/2 tsp Vanilla
- 1 cup hot water
Instructions
- Preheat the oven to 350 degrees.
- For those making the dairy-free version, please start off by pouring coconut milk (or your choice of milk alternative - I find coconut milk the best for this) in a measuring cup just under the 1 cup line. Ass 1 tbsp of lemon juice or vinegar into the measuring cup. This should measure 1 cup exactly. Let sit until it begins to curdle.
- Add all your dry ingredients into a large bowl. (Flour, sugar, cocoa powder, baking soda, and salt). Mix until fully blended.
- Add eggs, buttermilk (for the dairy-free option, this is when you would add your 1 cup mix of curdled lemonjuice & coconut milk instead) and oil into the dry ingredient mix. Whisk together fully.
- Add your vanilla into your hot/boiling water and then mix in with the other ingredients.
- Once you have mixed your ingredient fully for atleast 2-3 minutes, pour and divide evenly into your cake pan.
- Bake for 30 minutes at 350 degrees. Sometimes, if I use a large and deep cake pan I bake my cake a couple of minutes longer. Make sure to use a toothpick to see when completed.
